Is there anyway to choose the order the collectables goes in? I want all the birthstones next to each other, the fruit next to each other, then the randoms after.

No, not as of right now. I think they are working on it, though.

how they are ordered depends on the date they were bought, which is how I made mine a pattern like this. you could trade them for ones bought at a date that will allow them to line up the way you want.
