Here's one of my favorite recipes, especially around this time of year

Pumpkin Cupcakes

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1 cup packed light-brown sugar
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, melted and cooled
4 large eggs, lightly beaten
1 can (15 ounces) pumpkin puree

Directions

Preheat oven to 350 F degrees. Line cupcake pans with paper liners; set aside. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg; set aside.

In a large bowl, whisk together, brown sugar, granulated sugar, butter, and eggs. Add dry ingredients, and whisk until smooth.

Whisk in pumpkin puree.

Divide batter evenly among liners, filling each about halfway.

Bake until tops spring back when touched, and a cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating pans once if needed. Transfer to a wire rack; let cool completely.

Frost it with homemade Cream Cheese Frosting or Vanilla Buttercream Frosting :)

Changing it to a different recipe because I can't explain egg rolls xD My favorite recipe to make is my family's chinese cupcake recipe <3

10 eggs
2 cups of sugar

Beat with electric beater until there's bubbles, add 1 1/2 cups of flour on slow speed, pour into cupcake/muffin pan,and butter on top to bake.

30 min steam/bake

OR

1 bowl of egg
3/4 cup of sugar + flour

Mix until well with beater or whisk until bubbles appear, pour into cupcake/muffin pan, put butter on the top to bake.

30 min steam/bake

I love cooking chocolate biscuits but me and my Mum add some chocolate cream on top of them!

Ingredients:
2 eggs
1 cup brown sugar
1/2 cup vegetable oil
1 tsp vanilla essence
2 cups plain flour
1 tbsp baking powder
1/2 cup cocoa, sifted
Method:
Preheat oven to 180?C. Cover a baking tray with baking paper and set aside.

In a bowl, beat the eggs, sugar, oil and vanilla until well combined.

Stir in flour, baking powder and cocoa.

Roll spoonfulls into balls and press with a fork to slightly flatten.

Bake for 12-15 minutes. Leave to cool on the tray for 5 minutes then transfer to a cooling rack.

Then you can eat them once they cool down

Oh my goodness! I LOVE to make pumpkin scones! They are by far, delicious! And..-whispers- they're easy to make :]

Ingredients:
2-1/2 cups of Flour
1/4 cup of Granulated Sugar
1/4 cup of Brown Sugar
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
8 Tbsp Cold Unsalted Butter
1/2 cup Heavy Cream
1/2 tsp of Vanilla Extract
1/3 cup of Pumpkin Puree
2 tsp of Pumpkin Pie Spice
1 Egg
Egg wash (one egg beaten with 1 tbsp of water)
Raw Sugar


Process:

1) Preheat your oven to 400 degrees and line a baking sheet with parchment paper.

2) In the bowl of a standing mixer fitted with a paddle attachment, add the flour, sugar, baking powder, baking soda, pumpkin pie spice and salt, mix just to combine.

3) Add the cold butter and mix it just until the butter has broken up a bit and distributed evenly throughout the dry ingredients.

6) In a small bowl, whisk together the egg, pumpkin puree, cream and vanilla. Add it to the dry mixture and mix until the dough comes together.

7) Dump it onto a floured board and shape into a circle or a rectangle that’s about 3/4 inch thick. Cut the scones into desired shape and place them on the parchment lined baking sheet and brush the tops with the egg wash and sprinkle them with the raw sugar.

8) Bake for 17 to 18 minutes or until golden brown, let them cool completely.

My go-to recipe for baked goods is Banana Bread. :3

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup white sugar
  • 1 egg
  • 5 tablespoons milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup mashed overripe bananas (about 1 1/2 large)
  • 1/2 cup chopped walnuts (optional)
  • 1 cup semi-sweet chocolate chips

1. Preheat oven to 350 degrees F. Grease a 9x5 in. loaf pan and set aside,

2. Sift together flour, baking soda, baking powder, and salt into a bowl.

3. In another, larger bowl, cream sugar and butter until fluffy. Beat the egg slightly, and whisk it into the butter mixture. Stir in the bananas until smooth. Lumps are okay. :)

4. Stir in milk, and nuts/chocolate chips if using.

5. In 3 additions, beat in the dry ingredients just until there are no traces of dry flour. Don't overmix.

6. Spread batter into prepared loaf pan. Bake for 55-65 minutes or until a toothpick inserted into the center has just a few crumbs sticking to it.

This banana bread apparently is great with just chocolate chips, and a scoop of vanilla icecream on the side. :B

I know this is rather plain but here's my favorite thing to bake~

Red Velvet Cupcakes:

2 1/2 cups flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (2 sticks) butter, softened

2 cups granulated sugar

4 eggs

1 cup sour cream

1/2 cup milk

1 bottle (1 ounce) McCormick? Red Food Color

2 teaspoons McCormick? Pure Vanilla Extract

Vanilla Cream Cheese Frosting:

1 package (8 ounces) cream cheese, softened

1/4 cup (1/2 stick) butter, softened

2 tablespoons sour cream

2 teaspoons McCormick? Pure Vanilla Extract

1 box (16 ounces) confectioners’ sugar

Directions

Preheat oven to 350?F. For the Cupcakes, mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
Beat butter and granulated sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, one at a time. Mix in sour cream, milk, food color and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not overbeat. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
Bake 20 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely.
For the Frosting, beat cream cheese, butter, sour cream and vanilla in large bowl until light and fluffy. Gradually beat in confectioners' sugar until smooth. Frost cooled cupcakes with Frosting.
 
Japanese Christmas Cake!!

well, this certainly looks like the Birthday Cake (still searching for one xD) we receive from playing AC :p

I made this for the 1st time last year for Christmas btw :blush: made it a few times after that for special occasions too! :lemon:


Ingredients for Christmas Cake (18cm/7.09 inch diameter) クリスマスケーキの作り方 字幕表示可
- Sponge Cake -
150g Eggs (5.29 oz)
100g Sugar (3.53 oz)
90g Cake/Pastry Flour (3.17 oz)
(Please use Cake Flour if you can. Pastry flour is fine
but Cake Flour is better for its lower protein content.)
15g Unsalted Butter (0.529 oz)
1 tbsp Milk

- Soaking Syrup -
2 tbsp Sugar
3 tbsp Hot Water
1 tbsp Kirsch - a type of brandy made from fermented cherries

- Toppings -
400ml Whipping Cream with 35% fat (1.69 u.s. cup)
3 tbsp Sugar
450g Strawberries (0.992 oz)
Powdered Sugar

Parchment Paper (bottom): 18.4cm/7.24 inch diameter
Parchment Paper (side): 6x58cm/2.36x22.8 inch
Cake Pan (18cm/7.09 inch diameter)

* Let the cake cool down in the cake pan as it will keep the sponge cake moist.

** Advice for Making Christmas Cake **
This is one of the most difficult recipes we introduced, so please follow the instructions thoroughly.

The measurements and whipping time for the batter is critical to make a sponge cake. If the whipping time is not accurate, the sponge cake will become flat. Using a scale to measure the ingredients is absolutely necessary.

My favorite recipe that I have made several times is Chop Stick Tuna, it is soooo good. When I was little there were many times I would sleep over at my Grandma's, and it was a tradition that I would help her make this for our supper. So now and then when its my turn to cook for my family for supper, if I have the ingredients, I will make this. And of course it always makes me think of my Grandma, who is still very much alive, but I don't see her as often as I used to.

Ingredients
  • 2 cans of cream of mushroom soup
  • 2 tins of tuna
  • 2 cups of sliced and chopped celery
  • half a cup of chopped onions
  • half a cup of water
  • 2/3 pkg Chow Mein Noodles


Instructions
  1. Preheat oven for 350 degrees F
  2. Combine soup and water in cassorale dish
  3. Add all other ingredients
  4. stir to mix
  5. Put in oven uncovered
  6. Cook in oven for 20 mins.
 
Tiramisu



Ingredients

1/2 cup (120 ml) espresso or very strong coffee, at room temperature
1/4 cup (60 ml) dry Marsala wine, divided
2 teaspoons vanilla extract
3 large egg yolks
1/4 cup (50 g) granulated sugar, divided
8 ounces (225 g) mascarpone cheese (1 1/4 cups)
3/4 cup (175 ml) heavy cream
18 to 20 Savoiardi Italian ladyfingers (from 7-ounce package)
1 ounce (30 g) bittersweet chocolate or cocoa powder for dusting (optional)

Method
Prepare Coffee

Combine espresso (or coffee), 2 tablespoons Marsala wine, vanilla extract and a tablespoon of sugar in a wide, small bowl.

Prepare Filling

Beat egg yolks, 2 tablespoons of Marsala, and 3 tablespoons of sugar in a bowl set over a saucepan of barely simmering water until tripled in volume, 5 to 8 minutes. Use a whisk or, to make things easier, a handheld electric mixer at medium speed. (Do not stop beating until removed from the heat).
Remove bowl from heat then beat in mascarpone cheese until just combined.
Whip cream in a bowl until it holds stiff peaks. Once the yolk-mascarpone mixture has cooled a little, gently fold in half of the whipped cream into the yolk-mascarpone mixture, then the remaining half just until fully incorporated (the whipped cream will deflate a little).

Assemble Tiramisu

Dip half of the ladyfingers very quickly into the coffee, and line the bottom of a 9-inch (23 cm) square dish. (You might find that you need to break a few into pieces to fit them in the dish).
Spoon half of the mascarpone filling over the lady fingers and spread into an even layer. Grate half of the bittersweet chocolate over filling (optional). Then dip the remaining ladyfingers very quickly into the coffee and arrange a second layer over filling.
Spoon remaining mascarpone mixture over ladyfingers. Grate more chocolate on top or dust with cocoa powder. Cover with plastic wrap and refrigerate at least 6 hours.
When ready to serve, dust with extra grated chocolate or cocoa powder. Leave out at room temperature about 20 minutes before serving. (Tiramisu can be chilled up to 2 days, but no longer or else the ladyfingers will break down too much).

ahh i love baking, it would be hard to pick a favorite but this is definitely the most special recipe i have ^u^ its something my mom used to make for me from a really old cookbook she has :>

Double Chocolate Torte

Cake:

2 Cups Flour
2 Tsps Baking Soda
1/2 Tsp Salt
1/2 Tsp Baking Powder
3 Squares unsweetend Chocolate
1/2 Cup BUtter
2 Cups Light Brown Sugar, packed
3 Eggs
1 1/2 Tsps Vanilla
3/4 Cup Sour Cream
1/2 Cup Strong Coffee
1/2 Cup Coffee flavoured Liquer

Filling:

1 Cup whipping cream
2 Tbsps Icing sugar
1-12 oz Jar strawberry or raspberry jam

Frosting:
1 1/2 Cups Chocolate Chips
3/4 Cup Sour Cream
Dash of salt

Fresh Strawberries or Raspberries

Preheat Oven to 350 F
Grease well and flour 2 -9" Layer cake pans
Sift Dry ingredients
Melt chocolate and let cool
In a large bowl beat butter, brown sugar, and eggs at high speed until mixture is light and fluffy, about 5 minutes
Beat in melted chocolate and vanilla.
At low speed beat in flour mixture, alternating with sour cream.
Add Xoffee and Liquer, blending until smooth
Pour Batter into pans and bake 30-35 minutes or until surface springs back.
Cool in pans for 10 minutes, then remove from pans and cool on wire racks.

Filling:
Beat cream with icing sugar until stiff. Refreigerate. Slice cake layers in half horizonatally to make 4 layers. Place one layer cut side up on cake plate.
Spread with Jam and Whipped cream mixed. Repeat for remaning Layers. Ending with top later, cut side down.

Frosting:

Melt chocolate chips in top of double boiler. Add sour cream and salt and beat until frosting is creamy and smooth.
Frost top and sides of cake. Garnish with chocolate curls and fresh berries.


*Hint: Cake Layers slice more easily if frozen first.
** Hint: Heat a chocolate square in microwave for 10 seconds before shaving with a vegetable peeler
