i'm pretty sure snipe guard means that people have time to bid after the last bid was made so people don't just bid at 18:29:59 cet.

I thought there was a 5 minute snipe guard?

5 minute snipe guard means the bidding goes 5 minutes after the last bid. As in if a bid is made, there are always 5 more minutes for a new bid.
