AC:WW is probably the easiest. The other games I play are shooters so those definitely aren;t easy.

Tyco R/C: Batteries Required

It was for the PS1, and it was an RC car game, but it was incredibly fun and incredibly easy. Sadly, the game met Mr. Ketchup Bottle... ;_;
